Weekend Roundup: Too Much Food, Too Little Time

I spent most of last week sitting in bed with a wicked chest cold, but Friday night, Lily and I met up with Lauren, Shay, and Marlowe in Columbia to see the Divergent movie (since we’d all read the book). Before the movie, we got sushi (and delicious cucumber mojitos) at Miyo’s. My eyes were definitely bigger than my stomach, and I ended up giving most of my sushi away because I was too full. After dinner, we walked to the theater and settled in for the show. Shay & I were really pleased with the movie, but Lily, Marlowe, and Lauren all had some serious issues with it. Either way, if you read the books, I think it’s definitely worth the watch!

Saturday morning, we had a pretty disappointing lunch at Copper River Grill before spending a couple of hours wandering around the mall. We all went our separate ways around 3 (except Lauren who had to leave at 5 am to go be in a parade), and I spent most of Saturday afternoon laying in bed catching up on Grimm and eating the edible fruit bouquet that my parents sent me.

Around 9, I met up with people at a friend’s house where they were having a wine and cheese night to celebrate a new job. We hung out there for a while before meeting up with Cullen & Taylor at The Alley to get a few drinks to celebrate Taylor finally being 21! We ended the night at Butcher & Bee with a burger, some buffalo fries, and a lamb gyro. It was pretty delish. We also met up with them Sunday morning at Lost Dog Cafe for brunch before they headed back to Greenville.

After brunch, I took a cooking class at Southern Season entitled “Asian For A Crowd.” We made a cold Thai noodle salad, Korean beef bulgogi, Vietnamese banh mi sandwiches, bok choy kimchi, and a floredeliz salad for dessert. I immediately regretted the decision to get brunch before the cooking class because I was stuffed for the rest of the day.

After the cooking class, I met back up with Lily to see Muppets Most Wanted, which was entertaining, but nowhere near as good as the first Muppet movie. We also celebrated my sweet kitty, Fezzik’s, birthday. I can’t believe he’s 3 already!

In September of 2013 I was given the amazing opportunity to attend Southern Living’s Taste of Charleston festival as a blogger correspondent for Delta Faucet. In exchange for them paying for my ticket, the cost of transportation, and giving me a Delta Touch2O® faucet to try out, all I had to do was show up, eat a bunch of delicious food, and then tell you guys all about it, which I did in my Taste of Charleston a couple months ago. It’s definitely one of the best quality kitchen faucets, especially for a messy cook like me!

I’ll also be posting a recipe next week that I created after being inspired by all I saw and ate at Taste of Charleston. Cooking and cleaning have become so much easier with my new faucet, and I’m so spoiled now that sometimes I forget that most faucets require you to use a handle in order to work.

My mom called a plumber friend of hers to help install it, because we didn’t want try and install it ourselves and end up flooding the whole house (which really wouldn’t have been all that unlikely). He installed it in a snap, and we stood around playing with it for a really long time.

Mom was having her Christmas party that evening, so she was excited to show it off to all of her friends, who were super jealous. Basically everyone should have one of these faucets, because they’re as much fun to play with as they are convenient and useful.

Italian-Style Turkey Meatballs

So, I recently started dieting, kind of, and was trying to find some ways to use ground turkey in place of ground beef to save some calories and fat. I Frankensteined some recipes that I found off of the internet together to come up with this Turkey Meatball recipe that I think is pretty delicious…but then, I think everything I cook is delicious, so…

…ok, well MOST everything I cook.

Ingredients:

  • 1 pound Ground Turkey 93/7
  • 1/2 C Red Onion
  • 1/4 C Chopped Red Bell Pepper
  • 2 tsp Minced Garlic
  • 1/2 C Ricotta Cheese, part skim milk
  • 1/2 C Italian-style Breadcrumbs (I used Progresso)
  • 1 Tbsp Dried Parsley
  • 3 Tsp Italian Spices Mix
  • 2 Tsp Black Pepper
  • 2 Tsp Salt
  • 2 Tbsp Extra Virgin Olive Oil

Instructions:

1. In a bowl, mix together everything but the olive oil.

2. Add the olive oil to a frying pan set on medium-high heat and start rolling out your meatballs. I got about 16 balls out of the whole thing, but depending on how big you’re making them, you might get more or less.

3. Cook them until they register 165 degree internal temperature. I like to have a little crisp on the side, so I turned the heat up a bit at the end, but it’s totally up to you.

4. Serve the yummy meatballs with some pasta or just with some marinara sauce for a meal. Only 300 calories per serving (serves 5 people, or one person over 5 meals, which is what I ended up doing). I also sprinkled it with some fresh basil and parmesan cheese. Yummm!
