So we all know that the “big game” ??? is coming up this weekend, and no Super Bowl watch party is complete without some delicious grub! Here are some of my favorite dishes to bring with me to watch the VICs (that’s Very Important Commercials).

Loaded Tater Tot Casserole

I love cheesy tots, so it’s no surprise that this is one of my favorite recipes. I suggest waiting until the last minute to cook it because cold tots make me sad.

Loaded Tater Tot Casserole

Ingredients
  

  • 1 bag Ore-Ida tater tots I prefer Extra Crispy
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup swiss cheese
  • 1/2 cup bacon bits
  • green onions for garnish

Instructions
 

  • Cook tater tots according to directions on package. Mix cheese together.
  • Mix together ranch dressing, half of the cheese combo, bacon, and sour cream.
  • Remove tots from oven, but keep oven on. Toss with cheesy-ranch mixture and top with remaining cheese.
  • Bake for 5 minutes (or until cheese is melted) and sprinkle with green onion.
  • Enjoy!

New England Clam Chowder

Since it seems like the Patriots are always in the Super Bowl, you might as well get a little festive with this New England Clam Chowder. You can add more water and serve it in a bowl as an entree, or leave it nice and thicc and serve with chips and bread as a dip… either way, it’s delicious!

New England Clam Chowder

Ingredients
  

  • 1 LB butter unsalted
  • 1 LB All Purpose Flour
  • 5 LB Red Bliss Potato Diced ½”
  • ½ LB Bacon Raw Diced ½”
  • 3 LB Yellow Onion Diced ¼”
  • 1 LB Celery Diced ¼”
  • ½ GAL Whole Milk
  • ½ GAL Heavy Cream
  • 1 GAL Clam Juice Canned
  • 2 oz Clam Base or Clam Paste
  • 2 tsp Worcestershire Sauce
  • 1 TB Tabasco Sauce
  • 1 TB Fresh Thyme Chopped
  • 1 TB Garlic Chopped
  • 1 LB Corn Frozen
  • 4 LB Shucked Clam Meat
  • 1 GAL Water
  • To Taste Salt & Black Pepper

Instructions
 

  • In a saute pan, melt the butter over medium heat. Slowly whisk in the flour and cook for 5 minutes until the mixture resembles wet sand. Set aside.
  • Clean potatoes and cut into ½” dice. Place in a pot, cover with water, and cook through over medium-high heat (approx. 20 minutes). Reserve.
  • In a large stock pot add the bacon then place on the stove over low heat. Render the fat and cook until crispy. Remove bacon bits and leave fat in the pot.
  • Add the onion and celery and cook until translucent. Add bacon back to pot.
  • Whisk in clam base until fully incorporated. Add milk, heavy cream, clam juice, Worcestershire, tabasco, thyme, garlic and corn. Whisk to incorporate and then bring to a simmer.
  • Once at a simmer, slowly add the roux (cooked butter and flour) in small batches, whisking after each addition before adding the next batch. Whisking often, bring to a simmer.
  • This step is optional: The soup will be very thick at this point. Using UP TO the 1 GAL of water, slowly whisk in water and thin out to desired consistency.
  • Add cooked potatoes and clams then bring to a simmer. Season to taste.

Christine-a-Lena’s Guacamole

My best friend invented (or maybe stole, I have no idea) this guacamole recipe and it is my absolute favorite and I make it all the time. It’s always a hit! You can leave it super chunky if you prefer a nice chunky guac like me, or you can stick it in a food processor and make it silky smooth. Also don’t tell her I posted this or I might get in trouble.

Ingredients
  

  • hass avocados
  • 1 lime
  • 2 roma tomatoes
  • 1 shallot
  • 1 jalapeño
  • 1 clove of garlic
  • a boatload of cilantro optional if you're a monster who hates cilantro
  • salt & pepper

Instructions
 

  • Cut up and cube the avocado and add the garlic to a large bowl.
  • Small dice the Roma tomato, shallot, and jalapeño and add to bowl.
  • Juice the lime, cilantro, and salt & pepper to the bowl.
  • Mix well.
  • Serve with your favorite tortilla chips

The Granary to Re-Open in Mount Pleasant

January 25, 2017

In February 2017, longtime partnersBrannon Florie and Steve Palmer will reopen Mount Pleasant restaurant, The Granary,at a new location on 835 Coleman Boulevard. Joining The Indigo Road Hospitality Group’s family of restaurants, The Granary will continue to deliver Lowcountry inspired American fare featuring seasonal ingredients in an expanded and casual new space. 

Led by executive chef Brannon Florie, the culinary team will serve familiar Southern dishes such as shrimp and grits, fried chicken and pork belly, in addition to distinctively innovative plates like bone marrow and duck pot pie. Popular favorites from the original menu such as the Brussels sprouts and tempura shrimp will also be offered at the new location. A strong supporter of the South Carolina farming community, Florie’s menu will reflect the seasonal bounty of the region with featured ingredients that are sourced from local farms and purveyors such as Sea Island red peas and Jimmy Red Corn grits. The menu will also include extensive happy hour specials, a daily changing small plate, entrée specials and a dedicated kids menu. New to the concept is a raw bar which features local items like Bulls Bay oysters and clams, as well as carefully sourced regional selections from the west and northeast coasts.

“After years of working with chef Brannon, we are looking forward to playing a bigger role in the reopening of The Granary,” said The Indigo Road managing partner Steve Palmer. “The new space will provide a convenient location for our guests to visit and also has allowed us to build a 50 seat bar area, full raw bar and outdoor patio.”

To complement the culinary program, newly appointed beverage manager Roderick Weaver will craft the cocktail, wine and beer menus for the 50-seat bar. Formerly the opening bar manager at Lewis Barbecue, the city’s latest craze, and the director of cocktails and spirits at Sean Brock’s esteemed Husk, Weaver brings more than 20 years of experience to his new role at The Granary. The contemporary restaurant mirrors the inviting design previously at Belle Hall with casual, stylish interior with dark wood tables, exposed industrial elements and antique farm stools.

“Although the place looks a little different, we’re maintaining the integrity of the restaurant by keeping fan-favorites like happy hour offers, the date night menu and lobster roll Mondays,” said Florie. “We’ve worked with Steve and his team to boost the programming and menu with hopes of being a go-to spot for Mt. Pleasant residents and beyond.”

Bull Street Gourmet Cuts Prices & Adds Lunch Items

Bull Street Gourmet & Market, a specialty deli and catering company, has revamped its menu for 2017. Prices for sandwiches and wraps range from $6.95 to $9.95 and will now be served with a choice of house made sea salt chips (fried in house daily) or broccoli slaw, also a new addition. The shop/restaurant located at 120 King Street has been serving sandwiches, salads and catering since 2006.

Signature sandwiches including The Mozz and the Bull Street Chicken Salad remain on the menu. Executive Chef Christopher Evans has created the following new menu items:

Wasabi Mount Pleasant Introduces Late Night Happy Hour

Wasabi of Mount Pleasant is offering a late night happy hour menu from 8:30 – 10pm on Friday nights starting this Friday. During happy hour, guests can enjoy select appetizers, Maki sushi rolls and drink specials.

Wasabi of Mount Pleasant offers happy hour MondaySunday from 4:30-7pm at the bar and on the outdoor patio. The happy hour menu includes appetizers such as Edamame, Asian Tartar and Tuna Pizza for under $8. In addition to happy hour appetizers, a variety of specialty Maki sushi rolls can be enjoyed for under $5. Patrons can also sip on hot & cold sake, wine, beer and martinis during happy hour at a discounted price.

Bar Mash

Ok, so I’ve been debating whether or not to actually post this review because I’m torn between wanting to keep Bar Mash all to myself and shouting my love from the not-that-tall rooftops downtown. I finally decided to not be so selfish and go ahead and let you in on a little secret. Bar Mash is amazing. If you follow me on Instagram or Yelp, you’ll see that I’m there all the time (I have a problem). Their cocktails are fantastic, the staff is super cool, the food is tasty, and the atmosphere is comfortable and chill.

If you’ve read my Thrillist article, you already know that I’m mildly obsessed (understatement) with bar manager and mad cocktail scientist Teddy Nixon (and of course I mean that in a fun, adorable, pleasedontgetarestrainingorder kind of way). I could go on and on, but the gist of it is Teddy is awesome and you should have him make some drinks for you.

Like a boss.

The cocktail menu changes with the season, but I’ll showcase some of my favorites below. First up is the Arboretum with Hophead vodka, sage liquor, ginger, lemon, rosemary tincture ($12). It was fresh and refreshing and super delicious. I highly recommend it!

Here’s the Heavy on the Vine (St. George Chili Vodka, Blanco Tequila, lime, Watermelon-Basil shrub, soda, $12), which has a happy little kick to it. Definitely more of a savory cocktail (but in a good way).

I have no idea what watermelon-basil shrub is, but it’s delicious.

So normally when I come into Mash, I tend to just chat with Teddy or Elliot or whoever’s behind the bar and have them freestyle something for me mostly because I don’t understand half the ingredients in their drinks anyway. I just tell them what I like, and before I can say “this isn’t considered stalking is it?” BAM a tasty and refreshing cocktail appears in front of my face. It’s magical.

Here’s a mystery cocktail that I don’t know what it is, but I’m really proud of my photo (and I’m confident that I enjoyed it), so I’m going to showcase it here.

Food is also a great option at Mash. Below, I’ll highlight some of my favorite options. My first favorite is the tater tot poutine ($12), which was just added to the menu this fall. They’re topped with mozzarella curd, smoked pork, roasted tomato gravy, and It’s happiness in a bowl.

Next up, pretzel bites with beer cheese ($7). Super soft, chewy pretzels, and a thick, creamy cheese sauce makes for a picture perfect bar snack.

And they taste pretty good, too.

If you’re trying to err on the side of being healthy, the fried brussels sprouts are a pretty tasty option, too. Topped with a grilled scallion vinaigrette, and parmesan cheese ($10), it’s hard not to scarf these down like popcorn.

They should serve fried brussels at the movie theatre.

A recent find of mine was the fried pickles ($8). These house made pickles are done a little differently from normal, as they’re sliced long ways, before being breaded and fried. They’re also served with black garlic ranch dressing, which is the perfect accompaniment IMO.

And my opinion is clearly the only one that matters.

I’ve also tried the ricotta toast (duck ham, poached egg, oyster mushrooms, persimmon vinaigrette, $12). It’s good, but probably my least favorite of everything I’ve tried. Something about the duck ham just isn’t my cup of tea, but the poached egg on the toast with the creamy ricotta is pretty good on its own!

In addition to their normally great atmosphere, food, and drinks, they often have live music, a killer late night menu, rotating food trucks on Saturday nights, artisan jello shots, daiquiris, bocce, shuffleboard, a huge TV for watching sports games, and probably more stuff that I’m forgetting. *sigh* It’s just the best.

Just go. But make sure you save me a seat at the bar!

The Alley

The Alley is rolling into 2017 with their annual all-inclusive New Year’s Eve Party on Saturday, December 31st at 9pm.

The general admission ticket, which is only $85, includes everything you’ll need to to ring in the new year, including drink tickets for house beer, wine and spirits, beats from DJ Phamtastik, light hors d’oeuvres, free bowling and arcade games, a photo booth and a champagne toast at midnight.

For guests looking to start the new year in style, 4 VIP lanes are available for groups up to six people. The VIP treatment, which costs $750, includes premium liquor from the private, back bar area, a personal server and a bottle of bubbly for a new year’s toast.

The Alley will be open to the general public starting at 3pm for the Alabama vs. Washington CFB playoff game, and then, starting at 7pm, only ticket holders will be able to stay and enjoy the Clemson vs. Ohio State playoff game.

Now that we’re well into the winter season, there’s nothing like a boozy holiday drink to save the day. Holiday cocktails are the best way to cap off a long day of traveling or holiday clean-up, and basically the only way to get through those family feuds. Of course, like most delicious things in life, it helps to have a little guidance.

On Forty-One Gran’ma’s Hot Cocoa – Makes 1 Serving

Chocolate + Alcohol = Happiness

Spiked hot chocolate is the perfect example of an adult take on holiday traditions.  While it would be simple to grab the nearest booze and pour it right into your hot cocoa, you, holiday warrior, are better than that. Leave it to the pros at One Forty-One in Charleston, currently serving up a healthy dose of mint and chocolate like your most trusted neighborhood girl scout. Bitter orange cognac brandy, cool and sweet candied peppermint vodka, and a dollop of whipped cream make Gran’ma’s Hot Cocoa the best hot cocoa around.

  • 1oz Grand Marnier
  • 1 oz Dixie Mint Vodka
  • 2-3 dashes of Fee Brother’s Black Walnut bitters
  • 6 oz hot cocoa
  • mint whipped cream topping
  • garnished with a Vienna finger

Magnolia’s Egg Nog – Makes 12 servings

The only egg nog I’ll drink!

Magnolias serves a super indulgent eggnog during the holiday season that doubles as dessert. With cloves, vanilla bean, cinnamon, nutmeg and cardamom, it’s that perfect combination of sweet and spice. Plus, dark rum gives Magnolias’ eggnog a special twist, along with a dollop of whipped cream.

Magnolias’ recipe has been perfected by Pastry Chef Andrea Upchurch, and is perfect for holiday parties, or even just treating yourself at home. It’s only “eggnog season” for a few weeks out of the year, so why not get in the holiday spirit while sipping eggnog that actually tastes good!

  • 4 1⁄2 cups whole milk
  • 3 1⁄2 cups heavy cream
  • 5 each whole cloves
  • 1 each vanilla bean (split & scraped)
  • 1 tsp ground cinnamon
  • 1⁄2 tsp ground nutmeg
  • 1⁄4 tsp ground cardamom
  • 1⁄4 tsp fine sea salt
  • 1 dozen egg yolks
  • 1 1⁄2 cups sugar
  • 2 1⁄4 cups dark rum
  • Directions:

Combine milk, cloves, vanilla bean & seeds, cinnamon, nutmeg, cardamom, half of sugar, and salt in a saucepan. Heat on medium-low till the mixture comes to a heavy simmer. In a large bowl whisk together egg yolks and other half of sugar until light & fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture back into saucepan. Cook over medium heat, stirring constantly for approximately 2-3 minutes, or until thick. You do not want the mixture to simmer or boil. Strain through a fine mesh strainer. Stir in the heavy cream and rum. Put mixture in a metal container on an ice bath to cool completely.

High Wire Cider Wassail – Makes 12 Servings

Although it doesn’t tend to get too cold in Charleston in the winter (it’s all relative, baby), it helps to get more in the winter spirit with a hot toddy! I love this recipe that’s a take on my mom’s classic cider wassail, using some locally-made High Wire whiskey. Enjoy!

  • 1 quart apple cider
  • 2 cups High Wire bourbon whiskey
  • 1 cup orange juice
  • 1 cup DOLE® Canned 100% Pineapple Juice
  • 1 tablespoon brown sugar
  • 1/2 teaspoon lemon juice
  • 2 cinnamon sticks (3 inches)
  • Dash ground cinnamon
  • Dash ground cloves

Combine all of the ingredients in a pot and ring to a boil. Reduce heat and cover, simmering for 25 minutes. You can also cook in a slow cooker by combining all ingredients and simmering on low heat for 4-6 hours.

Zero Restaurant + Bar

December 15, 2016

I want to start off this post by saying that Zero Restaurant + Bar is probably my favorite restaurant in Charleston. I’ve been 3 times now and each visit was even better than the last (and I didn’t even think that was possible). I’m not sure what Chef Vinson Petrillo is doing back in that kitchen, but it is magical. Recently, they changed up the way they present the menu, with the focus being on more of a pre-fixe, Chef’s tasting menu, which is honestly what I would have ordered anyway. It’s a bit pricy at $125 a person, but for 6 courses and beverage pairings, I think you’re getting a pretty good deal.

Then again, I’m always willing to spend more on something delicious.

Even if you don’t want to stay for dinner or order off the a la carte menu (but you really should), you should definitely stop by the bar and try one of their fantastic cocktails. My favorites are The Red Scare (Agavales Tequila, PAMA, Jack Rudy Grenadine, Habanero Simple Cilantro, Lemon, Lime, $13), which has a great little kick to it, and the Alter Ego (Hendrink’s Gin, Lavender, Lime, Habanero Citrus Foam (Egg White), Burlesque Bitters, $13), which also has a kick to it, but is also so fresh and bright. But you can’t go wrong with pretty much anything on the menu.

My Alter Ego likes to pretend she’s constantly being filmed like in The Truman Show.

When I visited recently, I was joined by my friend (and one of my favorite local foodie bloggers) Marianne of Basil and Bubbly. It’s nice going to eat with a fellow food blogger, as you don’t get the same annoyed stares and sighs as people wait for you to take 15 pictures of 1 dish.

Our first course was the Snacks plate, which consisted of Chef Petrillo’s world famous (or at least they should be) deviled eggs with caviar, a foie gras macaron, a lobster roll bite, and a potted “plant.” Each item was about 2 bites (unless you have a big mouth like me). My favorite was definitely the deviled eggs (which I’ve had before and are always a crowd-pleaser), but the potted plant (puffed red quinoa, housemade butter & heirloom radish) was one of the coolest and most unique things I’ve ever eaten. This course was served with a glass of champagne, which gave the whole thing a very whimsical, Alice in Wonderland-type vibe.

And the presentation can’t be beat!

Course #2 was the Beet Tartare (with encapsulated carrot “yolk,” sorrel, yogurt, warm multigrain), which also caught us by surprise. First of all, who’d have ever thought you could make an egg yolk out of a carrot?! Granted it didn’t taste much like an egg yolk, but it sure looked like one. I’m not usually a fan of beets, but Chef Petrillo smoked them on the Zero grill before serving them to us, which gave the whole dish a touch of smokiness, which completely changed the flavor of the beets that I had been expecting. In fact, if you closed your eyes, you might not have even noticed that this dish was meatless. It was that good.

My brain auto-corrected it to “beef” on the menu anyway, so I was really thrown off when it came out and was purple.

Course #3–probably my favorite of the entire meal–consisted of liquid parmesan tortellini (chanterelle mushroom ragout, late peas, spruce tips). They poured a nice broth over the tortellini at the table, which made the dish an entire experience in and of itself. I love any combination of cheese and noodle, but these soft parmesan pillows were out of this world.

Lord, please let them serve liquid parmesan tortellini in heaven.

Course #4, in contrast, was probably my least favorite dish: roasted snapper with potatoes cooked in seaweed and mussels cooked in whey. It was a perfectly pleasant dish, but nothing about it knocked my socks off (although that could’ve just been because I hadn’t had a chance to put them back on after the tortellini…who’s to say).

Socks are such fickle creatures.

The final of our entree courses was something I’m surprised to say that I’ve never had the pleasure of eating before: Beef Wellington (I know, I know…and I call myself a foodie) with foie gras, caramelized onion, wild mushrooms, and aerated potato. Every bite I took of this dish made me stop and say “wow;” the beef practically melted in your mouth, and the potatoes were so light and airy, they didn’t even seem real. When my plate was finally empty, I went into a bit of a depression that still lingers on to this day.

Beef Wellington, where have you been all my life??

For our dessert course, we were treated to tres leches in Chef Petrillo’s classic style. Young coconut, spongy cake, and honeycomb provided 3 completely different tastes and textures, with an understated sweetness that was very satisfying to the palate. I would 110% order this again.

How many milks do I need to recreate this dish at home.

From the impeccable service to the ambiance of the gorgeous outdoor patio to the expectation-shattering culinary prowess of Chef Vinson Petrillo, Zero Restaurant + Bar will forever hold a special place in my heart. If you ever get a chance to dine here, you should jump on that opportunity posthaste!
