Quote of the Week 11/12/12

November 14, 2012

I’ve been super swamped with work/home/social/sleep/life that I’m going to have to keep this post short and sweet. This week’s quote comes from Nadia Giosia, a Canadian chef who hosts her own cooking show called “Bitchin’ Kitchen.” I might have to look into that.

“I believe that anyone can cook a great meal. Basically all you need to do is get your hands on some fresh ingredients and not be afraid to make a mess in the kitchen.”
–Nadia Giosia

They’ve got some really weird ideas of what “cuisine” is in Canada.

Wooo! College Football Season is finally here! GO COCKS! (That’s the University of South Carolina Gamecocks, for those of you who were wondering why my blog got very X-Rated all of a sudden).

This weekend Ben and I went to Columbia to tailgate with Cullen, Taylor, Lauren, and my parents at the USC vs ECU game (USC won, 48-10). We ate delicious burgers and pimento cheese fries at Rockaway Athletic Club on Friday night, and showered my brother with birthday gifts. I can’t believe he’s 20 already… WHY IS EVERYONE GETTING SO FREAKING OLD?!

Saturday we ate delicious Tina food, while sweating buckets in the fierce Columbia heat. Biscuits and gravy, sausage, fruit, couscous salad, grilled chicken, pan-fried chicken, chips and queso, goat cheese-stuffed tomatoes, caprese bites, goat cheese-wrapped asparagus, hot dogs, cupcakes… the list goes on and on. It was almost too hot to be drinking beer, so I stuck to drinking daquiris, mainly for the fact that they’re 90% ice.

Saturday night, we went to Huller’s Black Forest, a German restaurant off Harbison that is delicious. They have a buffet with traditional German fare and a station where they make schnitzel to order. We definitely over ate, but it was awesome. The owner is a really awesome guy who always has a smile on his face. He makes a bunch of different sausages in house, and was happy to let us try some at no extra charge. It was quite delicious and very gluttonous.

Sunday, before heading back down to Charleston, we stopped at Real Mexico Restaurant y Tienda for some delicious and fresh mexican food. I loved that all the food was made fresh to order, and everything seemed homemade. I usually avoid refried beans because they taste like they’ve been scooped out of a can, but here, I could tell that they were made fresh and with some pretty quality ingredients. I also got some killer tamales and empanadas that were quite delicious. I highly recommend stopping here!

This week’s quote comes from Mr. Homer Simspon, and pretty much sums up my feelings about College Football Season and why I love it so much. Have a great week!

“We’re not here for the game. The game is nothing. The game is crap. The game makes me sick. The real reason we Americans put up with sports is for this: Behold, the tailgate party. The pinnacle of human achievement. Since the dawn of parking lots, man has sought to fill his gut with food and alcohol in anticipation of watching others exercise.”
–Homer Simpson

If it wasn’t for tailgating, I wouldn’t even know football was a sport.

Hope everyone had a safe and fun-filled Labor Day weekend! I know I had fun. A little too much fun, in fact. Lauren was in town, so we went a little crazy with the food and drinks. But it was totally worth it. I’m just glad I had an extra day to recover. Hooray for three day weekends!

On Sunday we saw Legally Blonde: The Musical at the historic Dock Street theater downtown, starring our friend Sean Bear. It was really good, although having no A/C in the theater was not very fun, especially since it was a full house and 92 degrees outside. But, I highly recommend seeing it, ’twas very funny!

I spent most of “Labor” Day sleeping and eating. Which was pretty awesome. I slept til one pm, and then got Jack’s Cosmic Dogs with my parents and Cullen (who were in town for a wedding). Then I took a nap. Then Ben and I watched Meet The Robinsons and then I went to sleep. Pretty much it was the perfect day.

I know I owe you guys a Boston Round Up, so expect that to happen later this week! I’m thinking Thursday.

This week’s quote is in honor of Labor Day, and comes from the ever-hilarious Stephen Colbert. Enjoy!

“Have a relaxing LaborDay everybody! Unless you’re catering my BBQ, in which case, stay focused and keep the sangria chilled.”
–Stephen Colbert

Mmm…. tastes like Patriotism.

March 28, 2012

Because I’m still riding my Hunger Games high, I completely forgot to do a quote this week, so sorry it’s a little late. I’ve already got the next couple of weeks lined up, so it won’t happen again, pinky promise.

SInce I just spent the better part of a week with some of my best friends, eating some of my favorite foods, I found the following quote more than appropriate. It pretty much sums up how I choose my friends (how Lauren “The Salad Eater” slipped in there, I’m still not really sure), but it’s definitely how Sean and Christine became (and stayed) friends. Thanks, Gina Gershon for showing me I’m not the only one!

“Feeding is a very important ritual for me. I don’t trust people who don’t like to eat.”
–Gina Gershon

Italian Macaroni and Cheese

February 21, 2012

So, if you read my blog or know anything about me, you know that I have a weakness for macaroni and cheese. Macaroni and Cheese is my kryptonite… no matter how well I’m doing on a diet, I can’t ever seem to resist some cheesy mac. I guess if I’m being honest, I love anything with copious amounts of melted cheese on it–grilled cheese, fettucini alfredo, lasagna, queso dip, etc. I read somewhere once in a marketing textbook (or maybe I dreamed it…it’s really hard to say), that people are 70% more likely to buy something if it’s illustrated with a picture of melted cheese (I know I’m guilty of this, so we’ll call it science).

Recently my mom posted a video on my wall of some italian guy named Fabio making italian macaroni and cheese, and even though I’d decided that morning I was going to start dieting, I knew that if I didn’t make that recipe soon, I’d be dreaming about Mac n Cheese for the next few weeks. So, of course, I went out that afternoon and bought all of the ingredients I needed for my cheese extravaganza.

I edited the recipe a bit from Fabio’s recommendations, partly because I couldn’t find fontina cheese, and partly because it is impossible for me to exactly follow directions of any kind. So below is my edited recipe from Fabio’s Italian Macaroni and Cheese.

Ingredients:

  • 1 lb. dry elbow macaroni
  • ½ cup shredded Parmesan cheese
  • 2 cups shredded cheddar cheese
  • 8 ounces shredded smoked gouda cheese ( just got a round from Bi-Lo and shredded the entire thing)
  • 1/3 cup crumbled blue cheese (or gorgonzola)
  • 1.5 cups heavy cream
  • 12 cloves garlic, minced
  • 3 Tbsp. extra virgin olive oil
  • 2 cups panko breadcrumbs
  • 1 bunch fresh parsley
  • 1 lemon, zested
  • Salt and cracked black pepper to taste

Instructions:

  1. Put the heavy cream and all the cheeses into a metal mixing bowl.
  2. Add cracked pepper and pinch of salt to cream and cheese.
  3. Put the bowl on top of a pot of boiling water on medium high and stir until the cheese is melted, set it aside.
  4. Cook pasta in the pot of boiling water until al dente.
  5. Drain the pasta and set aside.
  6. Saute the minced garlic in olive oil over medium heat until soft.
  7. Remove garlic and mix with pasta.
  8. Mix in the cheese sauce, and put in the pot and heat for 2-3 minutes, stirring often. At this point, if you didn’t want to bake the macaroni, you could eat it right now. It tasted great and would’ve made a great creamy macaroni and cheese. I kind of wish I’d set some aside to compare the difference in taste.
  9. While the sauce is heating, put the breadcrumbs, parsley and lemon zest in a food processor and pulse until well combined.
  10. Place Mac and cheese in an oven safe container and top with bread crumb mixture and bake at 400F for 10-15 minutes or until golden brown. I made the mistake of leaving the macaroni in too long. The original recipe said 15-20 minutes, and I left it in for 17, and my finished result was not as creamy as I’d wanted it to be. I think it would have been much better had I not left it in as long.
  11. Also, I topped it with some more cheese, which I would advise against doing, since the cheese will burn before everything else is finished cooking. If you do want to top it with some cheese, do it like 2 minutes before you plan to take it out, that will it will be melty and delicious, and not burnt.

aaaand there goes my diet again.

Quote of the Week

Quote of the Week 2/5/12

February 5, 2012

In honor of the big game, Super Bowl XLVI, this week’s food quote is being published on Sunday. This is partly because it’s a holiday, and I enjoy highlighting holidays in my blog posts, and partly (or mostly) because I know I’m going to be too busy recovering from tonight’s festivities to try and write anything of substance tomorrow. Kathleen and I are throwing a party for the Super Bowl because she’s a die-hard Patriots fan, and I like to eat and drink in the company of friends. I’m in charge of the food (I know, shocker, right?) and she’s in charge of the alcohol. We make a pretty good team, and I’m pretty excited about it. New Year’s Resolutions, Shmoo Years Revolutions. It’s the Super Bowl! America’s holiday! The whole point is to eat and drink and scream at the TV…. although now that I think about it, that pretty much describes every holiday we celebrate in the Gallimore household. So.

“When your Super Bowl guests arrive, they should find a mound of potato chips large enough to conceal a pony sitting in front of the television. For nutritional balance, you should also put out a bowl of carrot sticks. If you have no carrot sticks, you can use pinecones, or used electrical fuses, because nobody will eat them anyway. This is no time for nutritional balance: This is the Super Bowl, for God’s sake.”

–Dave Barry

Americans pretty much use any excuse to eat and drink too much. This is why I'm a patriot.

Quote of the Week 1/23/12

January 23, 2012

So. This weekend was pretty great. I enjoyed myself. Went to two restaurants for restaurant week (reviews will be up soon, I hope!), went out with Kathleen and Trish for a much needed girl’s night, hung out with a really cute boy, and spoke with a terrible British accent for the majority of the weekend. It was pretty much the best weekend ever.

In honor of my British fest, here’s a quote from the very funny John Cleese that sums up my thoughts on vegetarianism.

“If God did not intend for us to eat animals, then why did he make them out of meat?”
–John Cleese

This is what too much SPAM does to a person.

Quote of the Week 1/2/12

January 2, 2012

For New Year’s Eve, I went to Atlanta to visit Sean and Christine, which was great for my psyche, but awful for my diet. I spent my holiday shoving food into my face like I was training for a hot dog eating competition. As such, here is a quote that I feel describes my eating habits over the past few days (and probably yours, too, I know how holidays can be).

“I don’t stop eating when I’m full! The meal is not over when I’m full. The meal is over when I hate myself! That’s… that’s when I stop.”

–Louis CK

Oh, so you can finally breathe again? Time to inhale some more food!

Today’s food quote comes from author Orson Welles. I find it to be the most inspiring weight loss advice I’ve heard so far. I’m going to start taking this into account, and I’m positive the weight is just going to melt off.

“My doctor told me to stop having intimate dinners for four unless there are three other people.”

— Orson Welles, author
